
Pork Chops with Apricot Dijon glaze w/ Sweet potato mash & baby green peas
This is a great dish for two!
Heat oven to 350 degrees
2 Pork chops
Salt & Pepper the chops
Mix half a cup each of apricot preserves & chicken broth
add 1 TBS of Dijon mustard , mix well
add 1 TBS of oil to medium heated pan
place salt & peppered chops in pan, cook 3 minutes on each side
once cooked place in baking dish and finish cooking in oven, approx. 12 minutes
add chicken broth & apricot mixture to pan, scrape up brown bits
simmer for about 10 minutes.
Once 12 minutes are up place chops back into the pan and coat well with glaze.
Sweet Potatoes
Peel & Cube 1-2 (depending on the size) sweet potatoes
boil for about 10-15 minutes
drain and smash
melt 2TBS butter and add 1 tsp. nutmeg & 1tsp cinnamon to melted butter. Cook 1-2 minutes.
